Golden Crisps

This is also from the My Fun to Cook Book.

Makes 30

You will need:

3 tablespoons syrup, 3 oz butter,
3 oz Castor sugar, 3 oz plain flour.
saucepan, tablespoon, wooden spoon,
2 baking sheets, teaspoon, palette knife,
wire tray, sieve.

1. Put 3 tablespoons syrup into the saucepan then add 3 oz butter and 3 oz sugar.

2. Turn the ring on low and heat the syrup, butter and sugar gently until they melt.

3. Turn on the oven at GAS No 5 - ELECTRICITY 375˚F.

4. Wait a few minutes for the mixture in the pan to cool, then add 3 oz sifted flour, stirring it in with the wooden spoon.

5. Grease the baking sheet thoroughly then put a small teaspoonful of the mixture 2-inches apart on the baking sheet.

6. Bake on the middle shelf of the oven for 6 minutes.

7. Take the crisps out of the oven. Let them cool very slightly.
THEY MUST NOT HARDEN.

8. Working very quickly, lever them gently off the baking sheet, using the palette knife and cool on the wire tray.

Castle Puddings

This also from My Fun to Cook Book.

You will need:

syrup, 2 oz butter, 2 oz castor sugar, 1 egg, 4 oz self raising flour.

6 small ramekin moulds, teaspoon, mixing bowl, small bowl, fork, wooden spoon, sieve, metal spoon, baking sheet, serving dish, small saucepan.

1. Grease and flour the moulds and put 2 teaspoons in each.

2. Put 2 oz of flour and 2 oz into the mixing bowl and cream them together with the wooden spoon.

3. Break the egg into the small bowl and beat with the fork to mix yolk and white.

4. Add the egg, a little at a time to the butter-and-sugar, beating hard with a wooden spoon.

5. Sift 4 oz of self raising flour into the mixing bowl and fold in with the metal spoon.

6. Turn on the oven at GAS No 4 - ELECTRICITY 350°F.

7. Fill each mould two-thirds full and stand on a baking sheet.

8. Bake in the top half of the oven for 20-25 mins or until they are done.

9. Remove from the oven. Allow to cool a little, then turn out on a serving dish.

10. Heat a little more syrup and pour over.

Friday Pie

This is another recipe from My Fun to Cook Book.

You will need:
8oz plain flour, salt, 2oz lard, 2oz butter, 
3–4 tablespoons cold water, 6 rashers bacon, 
4oz Cheddar cheese, 1 large ripe tomato, 
pepper, 3 eggs, 1–2 tablespoons milk

sieve, mixing bowl, tablespoon, knife, pastry board
rolling pin, 8-inch flan tin, kitchen scissors, cheese 
grater, pastry brush

1. Sift the flour with a large pinch of salt into the mixing bowl.

2. Add the lard and butter, cut into small pieces. With your fingers rub into the flour.

3. When all the lard and butter is evenly rubbed in, add 2 tablespoonfuls of water.

4. Mix the ingredients first with a knife, then with your hand, until you can lift out the dough in a lump. If the mixture is too dry, add another tablespoonful of water.

5. Sprinkle a little flour on the pastry board and put the lump of dough on it. Roll with the rolling-pin. Keep turning the dough not the pin.

6. When the dough is the thickness of two two-pence pieces, line the flan tin with it. Cut the pastry round the edge of the tin and keep aside.

7. Trim the bacon, cut into small pieces and lay half in the tin.

8. Grate the cheese and add half.

9. Chop the tomato and add half.

10. Repeat with the remaining bacon, cheese and tomato.

11. Break the eggs on top of the filling (do not break the yolks).

12. Turn on the oven at Gas Number 6 – Electricity 400°F.

13. Re-roll the remaining pastry and lay over the top of the pie to form a lid. Press the edges
together and mark with the back of a knife.

14. Brush the top with milk and cut three slits in the centre (to let the steam out).

15. Bake near the top of the oven for 30–35 minutes until the top is golden brown.

Sausage Popovers

This from the My Fun to Cook Book, published in 1969.

You will need:
4 sausages ( I used 12 slices of cooking chorizo), 4 oz plain flour, salt,
1 egg, 1/2 pint milk, lard.

kitchen scissors, bowl, wooden spoon, muffin tray,
sieve.

Makes 10

1. Using the scissors, remove the skin from the sausages.

2. Cut the skinned sausage into pieces.

3. Sift the flour into the bowl. Add a pinch of salt.

4. Make a small well in the centre break in the egg 

5. Add a little milk and stir with the wooden spoon, gradually adding more as the dry flour is worked in.

6. When half the milk is added, beat very thoroughly. Add remaining milk. Beat again. Leave to stand for 10 mins.

7.Turn the oven on at Gas No. 8 - Electricity 450°F.

8. Put a tiny piece of lard into each place and put the tray into the oven to heat for a few mins.

9. Remove muffin tray from the oven and into each place put a few pieces of sausage. Pour the batter over the sausage pieces.

10. Bake near the top of the oven for 15 mins until golden brown,
