Sausage Popovers

This from the My Fun to Cook Book, published in 1969.

You will need:
4 sausages ( I used 12 slices of cooking chorizo), 4 oz plain flour, salt,
1 egg, 1/2 pint milk, lard.

kitchen scissors, bowl, wooden spoon, muffin tray,
sieve.

Makes 10

1. Using the scissors, remove the skin from the sausages.

2. Cut the skinned sausage into pieces.

3. Sift the flour into the bowl. Add a pinch of salt.

4. Make a small well in the centre break in the egg 

5. Add a little milk and stir with the wooden spoon, gradually adding more as the dry flour is worked in.

6. When half the milk is added, beat very thoroughly. Add remaining milk. Beat again. Leave to stand for 10 mins.

7.Turn the oven on at Gas No. 8 - Electricity 450°F.

8. Put a tiny piece of lard into each place and put the tray into the oven to heat for a few mins.

9. Remove muffin tray from the oven and into each place put a few pieces of sausage. Pour the batter over the sausage pieces.

10. Bake near the top of the oven for 15 mins until golden brown,
